Sansa's Lemon Cakes

First, I would like to give credit where credit is due and site Rosanna Pansino for coming up with a tasty and perfect recipe for these Game of Thrones themed desserts. I had an absolute blast making these for the finale and my work colleagues have enjoyed the left overs as well! 
I did find mine to be a little under cooked even after baking for 14 minutes, and I did not have access to Meyer's lemons so I used a set of lemons that are probably a little sour compered to Rosanna's. If you have an oven that struggles to get as hot I would recommend baking for 16 minutes, and if you don't have access to Meyer's lemons I chose to compensate by sprinkling the lemons with sugar before adding the cake batter and after letting them cool. 
I want to keep making this recipe because the cake part was so wonderful, but I  think I could improve  the lemon a little. This recipe makes the lemon a perfect and soft addition to the cake, made to be cut with the cake when taking a bite. I think I may try to really candy them though and make them more of a hard-candy garnish to go on top of the cakes, just to give it a try! I've also thought about doubling the recipe, adding strawberries to Rosanna's candying process with the lemons, and replacing the second tsp of vanilla extract with strawberry extract. That way I can see if a strawberry lemonade version could work as well.

Lemon cakes are what my mom used to bake us in the past. I think that lemon cakes are really the best when it comes to just filling up an empty stomach. Well, I was a kid back then, so I did not really have a big stomach to fill. I think that it is only natural that I ate what my mother prepared for me, though. I enjoyed the lemon cakes that she brought as during snack time, I really did.
